Simple, yummy soup. It was great for using up my leftover cabbage.
1 C chopped onion
1/2 lb sausage (I always use the full pound and it makes it a bit thicker.)
8 C beef broth (Tonight I used chicken bouillon and a couple dashes of worcestshire and it was really good)
1 tsp oregano
1-2 bay leaves
Salt and Pepper to taste (if you use bouillon cubes, don't add any salt)
1 C carrots chopped
1 C celery chopped
2 C cabbage
1 1/2 C pasta (I used radiatore)
Saute Onion and Sausage until browned. Add beef broth and seasonings and let simmer for ten minutes. Add veg and pasta and let simmer until pasta is soft. Serve with parmesan on top.
