Shrimp (The easiest way is to buy the already cooked shrimp and quickly defrost)
Carrots (I use my little spiralizer peeler from pampered chef to get thin shreds of carrot)

Spring Roll wrappers
This is really a great way to use any fresh veg/herbs you have on hand. I stick the rice noodles in hot water for about 10 minutes until soft. Then I fill a cake pan with hot water, soak the spring roll wrapper for about 30 seconds then layer in shrimp, noodles, cucumber, carrot, avocado, and fresh herbs. Then wrap it up.
about 2 T powdered peanut butter
This peanut sauce is super simple. Put the powdered peanut butter into a bowl, add water until it's the consistency you like, add garlic and ginger, salt and chili to taste.
