Shortbread from Ina Garten:
3/4 lb unsalted butter, room temp
1 C sugar
1 t vanilla
3 1/2 C flour
1/4 t salt
Preheat oven to 350 degrees.
In a bowl of an electric mixer, mix sugar and butter until combined. Add vanilla. Ina separate bowl, sift together flour and salt, then add them to the butter and sugar mixture. Mix on low speed until the dough starts to come together. Dump onto a surface and dust with flour and shaped into a flat disk. Wrap in plastic and chill for 30 min.
Roll the dough 1/2 in thick and cut with 3 in round cutter. Place cookies on ungreased cookie sheet. Bake for 15-20 min. Let cool
Melt 1 package caramels with 2 T water. Using a spoon, spread caramel onto cookies.
Melt 1-2 C chocolate chips (dark or milk depending on preference) in microwave, stirring every 30 sec until mostly melted. Let the last few lumps melt as you stir. With a spoon, spread on top of caramel after caramel is cooled somewhat.
