Chocolate mint cookies

Chocolate mint cookies

1 1/2 cups Sugar

From Diary of a real housewife

  • 1 cup Butter softened

  • 2 Eggs

  • 2 teaspoons Vanilla extract

  • 2 cups Flour (10 oz) I have the best results with cookies when I weigh the flour

  • 2/3 cup Cocoa powder

  • 1/4 teaspoon Salt

  • 3/4 teaspoon Baking soda

  • 10 oz Andes mint baking chips (I didn’t have these so I used 5 oz of some mint melting discs I had and 5 oz chocolate chips)


  1. Preheat oven to 350 degress F.

  2. Add sugar, butter, eggs, and vanilla to a stand mixer (or in a large bowl with a hand mixer) and beat until fluffy.

  3. In a seperate bowl whisk together flour, cocoa, salt, and baking soda. Combine this with your butter mix. Fold in andes mint pieces.

  4. I used my bigger cookie scoop to scoop these on (about 2 T) and baked for 11 minutes. Allow to cool on pan for 5 minutes.
